I’m not really sure why it’s called Lamington. I always thought a Lamington was a Australian cubed cake coated in chocolate and dried coconut.  Named after Lord Lamington who served as Governor of Queensland. But maybe he rode a moose around the town, that would be pretty cool – but also extremely Canadian. So  maybe someone was referring to the cubed cakes and said Lamington Mousse and with a thick Aussie accent, and the obvious similarity in the pronunciation was mistaken by a Canadian for a Moose…So next time you see a Moose Crossing sign… You’ll think of the Mousse Lamington cakes and stop at the next road side cafe.
